Prepare all types of sushi including roll clutch and sashimi. Check the quality of the fruits vegetables and fish used in the sushi. Keep the kitchen clean and orderly. Monitor inventory and place orders during shortages. Oversee the training of kitchen staff in preparation and cooking. Recommend special cooking methods.
